What's in the box

• Whole Beef Heart: Lean, rich, and surprisingly steak-like. Slice thin and sear hot, grind it into burgers, or marinate for kebabs.
• Beef Liver: One of the most nutrient-dense foods on the planet, packed with vitamin A, B12, iron, and folate. Pan-fry with onions or blend a little into ground beef if you're new to organ meats.
• Oxtail: Rich in collagen and made for low-and-slow cooking. Braise it, stew it, or simmer it into a deep, nourishing bone broth.
• Beef Tongue : Tender, rich, and one of the most underrated cuts on the animal. Simmer it low and slow, peel, then slice for tacos de lengua, sandwiches, or a classic braise.
